Quite Possibly the Best Fish Dish

Baked Blue Gill

One of the tastiest, if not the smallest, fresh water fish has got to be Blue Gill. You’ll need to catch at least ten to make a meal, but your effort will be well worth it.

Ingredients:

  • 1 Pound Filleted Blue Gill
  • ¼ cup milk
  • ½ teaspoon vinegar
  • ½ cup cornmeal
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon thyme
  • ¼ teaspoon cayenne pepper
  • salt and pepper to taste
  • Lemon wedges for garnish

Instructions:

  1. Mix milk and vinegar in a bowl add fillets and let stand for fifteen minutes
  2. Mix rest of ingredients in a separate bowl.
  3. Preheat oven to 300 degrees
  4. Brush pan with olive oil
  5. Dip fillets in seasoning mix and place on pan
  6. Bake for four minutes each side
